Why restaurants are a cooling challenge

Few environments are as demanding to cool as hospitality. A restaurant combines an intensely hot kitchen, a dining room packed with people (each generating body heat), large windows, and dramatic swings between quiet afternoons and a full evening service. Standard domestic sizing simply doesn't cope.

Getting it right keeps diners comfortable enough to linger and order more, and keeps front-of-house staff working effectively. A poorly cooled restaurant loses custom in summer and exhausts its team. Cooling the dining area

The dining space needs even, draught-free cooling that doesn't blow directly onto tables. Common solutions include:

  • Ceiling cassette units, recessed and discreet, distributing air in four directions across open seating.
  • Multi-split systems, giving independent control of separate zones such as a bar, mezzanine or private dining room.
  • VRF systems, for larger venues needing precise multi-zone control and quiet operation.

Kitchens: cooling vs ventilation

Commercial kitchens are a special case. Ovens, fryers, grills and dishwashers create extreme, localised heat, and air conditioning alone is not the answer. Kitchens primarily need robust extraction and ventilation to remove heat, steam and cooking odours, with targeted cooling to keep working temperatures safe for staff.

The two systems must work together: ventilation handles the heat removal and air quality, while correctly positioned cooling protects staff comfort and food-safety temperatures. Be wary of any installer who proposes simply pointing AC units at a busy cooking line, it won't work and wastes energy. Confirm any refrigerant work is carried out under F-Gas/REFCOM registration.

Because a cooling failure during peak service is a genuine business emergency, reliability is paramount: keep systems on a planned maintenance schedule, and note that emergency call-outs are available when you can't afford to lose a service.
